John, Regarding your brisket. What do you smoke it with, what temperature do you cook it? Your brisket sandwich was to die for. Do you an injection in your brisket? I've had a lot of sandwiches and hands down that was the best sandwich I've ever had. I will be down, from Apple Valley, soon to pick up a brisket and a couple bags of the maple chunks. I mostly use red oak but I do love maple.
